Heirloom apples from Serbia

he Romans brought their favorite apple varieties to the Balkans to help sustain an army and an empire. Today, traces of t hose ancient lineages survive in Serbia’s heirloom apples.

Whether your market is fresh or industry, it’s worth getting to know a few favorites.

 

KOZARA, a deeply russeted forbearer of Golden Delicious. Its honeyed sweetness and delicate apple flavor are in contrast to its rough exterior.
BUDIMKA is famous for its ideal balance of acids and sugars. Highly sought after by industry to bring real apple flavor to juices and ciders. In Serbia the Budimka is treasured fresh and for baked dishes.
At just over 4 cm in diameter, SHUMATOVKA apples are small but intensely flavorful. Wild, tart and super-crisp, these beauties bite back. Believed to be one of the oldest varieties. An absolute favorite in Serbian country homes.

Commercial availability of heirloom varieties is limited. Special arrangements can be made with suppliers well in advance of the season.

Today, Serbia supplies apples for fresh markets, juices, concentrates and processing. Varieties include Golden Delicious, Granny Smith, Elstar, Gloser, Jonagold, Melrose, Vista Bela, Belgolden and many others. Fresh production is expanding rapidly, as is organic certification.
